Passionfruit slice preparation.

How to slice passionfruit?

To slice a passionfruit, ensure it’s ripe (the skin should be wrinkled), then cut it in half crosswise with a sharp knife. Scoop out the pulpy seeds with a spoon to use in your recipes or as a topping.

How to crush biscuits in a food processor?

To crush biscuits in a food processor, place them in the processor, and pulse in short bursts until you achieve the desired crumb size, whether fine for smooth bases or coarse for added texture. Avoid over-processing to prevent the crumbs from clumping.

Making passionfruit icing.

Why is my icing too runny or too thick?

If your passionfruit icing is too runny, add more sifted icing sugar, a tablespoon at a time, until you reach the desired consistency. If it’s too thick, add a little more passionfruit pulp or a teaspoon of milk to thin it out.

Expert Tips

  • Consistency of the Base: Make sure the biscuit crumbs are finely processed for a smooth base. This helps in forming a solid layer that holds together well when sliced.
  • Even Spreading: Use the back of a spoon, a small offset spatula or your hands to press the base mixture firmly into the pan. This ensures the base is compact and even, which is crucial for a neat slice.
  • Sifting the Icing Sugar: Always sift your icing sugar before mixing to avoid lumps in your icing. This creates a smoother finish.
