Ingredients you’ll need

  • Arrowroot biscuits – Finely crushed for the base
  • Desiccated coconut – Adds texture and light chew
  • Lemon zest – For the most fresh and potent lemon flavor
  • Sweetened condensed milk – Binds the base
  • Lemon juice – Balances sweetness with tang
  • Icing sugar – Sweet base for the icing
  • Butter – Adds richness and smooth texture
  • Lemon juice – Creates the tangy icing

How to make easy lemon slice

Step 1: Combine crushed biscuits, coconut and lemon zest in a large mixing bowl.

Step 2: Mix in condensed milk and lemon juice until it all sticks together. Press mixture into lined pan.

Step 3: Make the icing by whisking together sifted icing sugar and lemon juice.

This Easy Lemon Slice (No Bake) is zesty, sweet, and simple! Made with biscuits, coconut, and tangy lemon icing, the perfect fridge slice!

Ingredients
 
 

Base
  • 200 g plain milk arrowroot biscuits, or marie biscuits
  • 1/2 cup desiccated coconut
  • 2 Tbsp lemon zest, about. 1 large lemon
  • 1/2 cup sweetened condensed milk
  • 2 Tbsp freshly squeezed lemon juice, about. 1 large lemon
Lemon Icing
  • 1 1/2 cups powdered sugar
  • 2 Tbsp freshly squeezed lemon juice, about. 1 medium lemon

Method
 

Base
  • Prepare pan: Grease and line an 8-inch or 9-inch (20cm) square pan with parchment paper.
  • Crush biscuits: In a high-speed food processor, crush biscuits to a crumb. Transfer to a large mixing bowl.
  • Mix base: Add coconut and lemon zest to the biscuits and mix until well combined.
  • Add Liquids: Pour in the condensed milk and lemon juice, mix until well combined and it all sticks together.
  • Press firmly: Spread the mixture into prepared pan and press down into an even layer.
Lemon Icing
  • Make icing: Sift powdered sugar into a bowl. Stir in lemon juice until smooth and thick.
  • Spread & chill: Spread the icing over base and refrigerate for 3-4 hours or until set.
  • Slice & serve: Cut into squares and enjoy!
