Ingredients you’ll need

  • Milk arrowroot biscuits – form the buttery, crumbly base. Can also use Marie biscuits or any plain sweet biscuits such as plain digestive biscuits.
  • Light brown sugar – adds caramel sweetness
  • Butter – binds the base and enriches the icing
  • Whole milk – keeps the base soft and smooth
  • Powdered sugar – for the creamy icing
  • Pumpkin pie spice – brings the cozy fall flavor

How to make easy no bake pumpkin spice bars

Step 1: Melt butter and brown sugar together until dissolved.

Step 2: Stir through the milk until well combined.

Mixing crushed biscuits into melted butter mixture.

Step 3: Add crushed biscuits and mix until well combined.

Pressing base mixture into lined pan.

Step 4: Press mixture evenly into the lined pan and refrigerate while you make the icing.

Step 5: Sift powdered sugar and pumpkin pie spice into a bowl. Add melted butter and milk. Whisk until smooth and thick.

Ingredients
 
 

Base Layer
  • 250 g milk arrowroot biscuits, or Marie, Plain Digestive Biscuits
  • 1/2 cup packed light brown sugar
  • 113 g unsalted butter
  • 1/3 cup whole milk
Pumpkin Spice Icing
  • 2 cups powdered sugar
  • 2 1/2 tsp pumpkin pie spice, homemade or store-bought
  • 60 g unsalted butter, melted
  • 2 Tbsp whole milk

Method
 

Base
  • Line Baking Pan: Line a square 8×8 inch (22cm x 22cm) square baking pan with parchment paper. Set aside.
  • Crush Biscuits: In a high-speed food processor, crush the biscuits until a fine crumb. Set aside.
  • Melt Butter and Sugar: In a medium saucepan over low heat, melt the butter with the brown sugar until the sugar dissolves.
  • Add Milk: Remove from heat and stir in the milk until combined. .
  • Combine and Press: Pour the crushed biscuits into the saucepan with the melted mixture, stirring until fully combined.
  • Add to Pan: Press the mixture firmly and evenly into the lined pan to create the base. Place in the fridge while you make the topping.
Pumpkin Spice Icing
  • Sift Icing Sugar and Spice: Sift powdered sugar and pumpkin pie spice into a medium-sized mixing bowl to ensure no lumps.
  • Add Butter and Milk: Pour in melted butter and milk. Whisk until the mixture is smooth and thick.
  • Spread Icing: Evenly spread the icing over the chilled biscuit base.
  • Set in Refrigerator: Return the pan to the refrigerator for 1 hour, or until the icing sets. For quicker setting, you may chill it in the freezer.
  • Slice: Once set, remove the slice from the pan. Cut into squares or desired shapes and enjoy!
