Ingredients you’ll need

  • Applesauce – the key ingredient for natural sweetness and a moist texture (use unsweetened or sweetened)
  • Extra virgin olive oil – adds extra moisture and softness (or use any neutral oil)
  • Egg – binds the batter and gives the muffins structure
  • Vanilla extract – adds warmth and depth of flavor

How to make easy mini applesauce muffins

Step 1: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Step 2: Pour in the melted butter, applesauce, oil, beaten egg, and vanilla extract. Gently fold everything together with a spatula until just combined.

Step 3: Spoon the batter evenly into the muffin cups, filling each about three-quarters full. Bake for 9–12 minutes. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Ingredients
 
 

  • 60 g unsalted butter, melted
  • 3/4 cup all-purpose flour
  • 1/4 cup superfine sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 1/8 tsp salt
  • 1/2 cup unsweetened applesauce
  • 2 Tbsp extra virgin olive oil, or any neutral flavoured oil
  • 1 small egg, beaten
  • 1 tsp vanilla extract

Method
 

  • Prepare pan: Preheat oven to 340ºF (170ºC). Grease or line a 24-hole mini muffin tin and set aside.
  • Melt butter: Melt the butter and set aside to cool slightly while preparing the dry ingredients.
  • Mix dry: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon and salt.
  • Add wet ingredients: Pour in the melted butter, applesauce, oil, beaten egg and vanilla. Fold gently with a spatula until just combined, do not over-mix.
  • Fill cups: Spoon the batter into the muffin cups, filling each about ¾ full.
  • Bake: Bake for 10 minutes or a toothpick inserted in the center comes out clean.
  • Cool: Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!

Notes

Room Temp: Store in an airtight container for 3–4 days at room temperature.
Freeze: Once cooled, place muffins straight into a large freezer bag or airtight container. Freeze for up to 3 months
Thaw: At room temperature for about an hour, or warm gently before serving.
