Cinnamon Sugar Muffins! A cross between cinnamon donuts and classic muffins *drool*! These easy muffins are bursting with heartwarming cinnamon, delicious apple and have a fluffy inside and a slight crisp topping. 

The muffins themselves are made in one bowl and you will not need any electric equipment, just your bowl and a good spatula!

Cinnamon Sugar Muffins


Description

A cross between cinnamon donuts and classic muffins *drool*! These easy muffins are bursting with heartwarming cinnamon, delicious apple and have a fluffy inside and a slight crisp topping. 


Ingredients

  • Cinnamon Sugar
  • 3 Tbsp cup (60g) raw granulated sugar
  • 1 Tsp ground cinnamon 
  • Muffins
  • 125g unsalted butter, melted 
  • 1 1/2 cups (230g) plain all purpose flour, use gluten free flour if preferred 
  • 2 tsp ground cinnamon
  • 1 tsp (3g) baking powder
  • 1 tsp (7g) baking soda
  • 1/2 cup (110g) raw granulated sugar
  • 1 cup (270g) apple sauce
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Cinnamon Sugar
  2. Mix together sugar and cinnamon in a small bowl. Set aside. 
  3. Muffins
  4. Preheat oven to 180ºC (350ºC). Line a 12-hole muffin pan with muffin patty pans, set aside. 
  5. Melt butter first and set aside to cool slightly. 
  6. In a large mixing bowl, sift flour, cinnamon, baking powder and baking soda together. 
  7. Stir through sugar.
  8. Pour in apple sauce, egg, vanilla and melted butter. Gently mix together with a spatula or wooden spoon, until a soft and smooth batter forms, ensuring not to over-mix. 
  9. Add chocolate chunks and fold through until combined. 
  10. Spoon batter into prepared muffin pan. Filling each 3/4 of the way full.
  11. Sprinkle cinnamon sugar over each muffin, distributing mixture evenly. 
  12. Bake for 15-20 minutes or until lightly golden and a toothpick inserted comes out clean. 
  13. Remove from oven and cool in pan for 5 minutes. 
  14. Transfer to a wire rack to cool completely. 
  15. Serve and enjoy!
  16. Store in an airtight container, in the pantry, for 3-4 days.
