🍒 Optional Mix-Ins
Customize your rocky road with a variety of mix-ins to add new flavors and textures. Add up to 1/3 cup of these optional mix-ins to your rocky road:
- Dried fruit: Chopped dried apricots, cranberries, blueberries, sultanas or cherries can add a fruity, slightly tart flavor to your rocky road.
- Nuts: Chopped nuts such as almonds, peanuts, hazelnuts, pistachios, walnuts or cashews will add extra texture.

📋 Ingredient Notes & Substitutions
- White chocolate block: Use a block of white chocolate, one that you would be happy to consume. I use either Cadbury Baking White Chocolate Block or Nestle Plaistowe White Chocolate Baking Block.
- Biscoff Spread: Find Lotus Biscoff spread in your local supermarket, near the peanut butter! I use the creamy spread but you can experiment with the crunchy style too.
- Biscoff Biscuits: use the plain Lotus Biscoff Biscuits, not the sandwich biscuits with the cream in the middle.
- Unsweetened shredded coconut: can also be substituted with desiccated coconut, also known in the US as finely shredded coconut.
- Marshmallows: I use regular-sized marshmallows, chopped in half using scissors. You can also substitute them with smaller or mini-sized marshmallows.
🥣 Step By Step Instructions (with photos)

Step one: Prepare a double boiler by placing a heat-proof mixing bowl over a medium-sized pot of simmering water.
Break up the block of chocolate and place it into the bowl over the simmering water.
Step two: Gently melt over low-medium heat, stirring occasionally until it’s completely melted and smooth.
Once melted, stir through the Biscoff spread until well combined and melted through the chocolate. Turn off the heat.
Step three: Stir through the shredded coconut.
Step four: Add marshmallows and the broken-up Biscoff biscuits. Stir until they’re completely coated in the chocolate.
Step five: Spoon into the lined tin, spreading out evenly. Place a few extra Biscoff biscuits, whole or broken up, on top. Refrigerate for 2-3 hours or until completely set and solid.
Step six: This Biscoff rocky road is softer than a regular rocky road so you can cut into straight away and consume it straight away without breaking a tooth!
Take a sharp knife and cut into long slices then into squares. Enjoy!

- Good quality white chocolate: White chocolate is a key ingredient in this recipe, so it’s important to use good quality chocolate to ensure the best taste and texture.
- Use a double boiler to melt the chocolate: To prevent the white chocolate from burning or seizing, it’s best to melt it using a double boiler. This involves placing the chocolate in a heatproof bowl set over a pot of simmering water. Do not let any droplets of water from the simmering water underneath get into your chocolate or it will ruin it.
- Add Biscoff spread when the chocolate is melted: Once your white chocolate has finished melting, stir through the Biscoff spread. Instead of mixing it through while the chocolate melts.
- Extra Biscoff biscuits: Leave some extra whole Biscoff biscuits aside to place on top of your rocky road once it’s in the tin. Either break them up or leave them whole for a great visual effect.
- Slice rocky road with a warm knife: Hold your knife under hot running water from the tap for a few seconds, wipe it dry then cut your rocky road. A warm knife is easier to cut through solid and chilled chocolate.

Freeze chopped rocky road in an airtight container with layers of either cling film or parchment paper between the pieces to prevent them from sticking. Freeze for up to 1 month.
Freeze the entire block of the rocky road that’s already set after being in the refrigerator by removing it from the tin and wrapping it tightly in a double layer of cling film, leaving it on the parchment paper. Place in an airtight container in the freezer and freeze for up to 1 month.
Thaw frozen rocky road by placing it in the fridge overnight to defrost, still wrapped up and in the container. Then place it on your kitchen counter for several hours until soft enough to eat.
Alternatively, thaw it from frozen at room temperature for several hours until soft.

Ingredients
- 400 g white chocolate block, good quality
- 200 g (3/4 cup) Lotus Biscoff Spread
- 1/2 cup unsweetened shredded coconut
- 2 cups regular-sized marshmallows, any colors, cut in half
- 150 g Lotus Biscoff Biscuits, roughly broken up in pieces
- Extra Biscoff biscuits for the top, optional
Instructions
- Line a square 9-inch x 9-inch (22cm x 22cm) baking tin with parchment paper and set aside.
- If using regular-sized or larger marshmallows, cut them in half using scissors or a knife and set aside.
