Chia Cookies
These Chia Cookies are a delicious blend of peanut butter, honey, and chia seeds for a crunchy, healthful cookie!
Ingredients
Method
- Preheat Oven: Set your oven to 320ºF (160ºC) and line a large flat baking tray with parchment paper. Set aside.
- Mix Wet Ingredients: In a large mixing bowl, combine peanut butter, honey, milk, olive oil, and vanilla extract. Whisk until the mixture is smooth.
- Add Dry Ingredients: To the same bowl, add flour, baking powder, and chia seeds. Use a wooden spoon to stir until a soft dough forms.
- Shape Cookies: Take about one heaped tablespoon of dough, roll it into a smooth ball, place it on the prepared tray, and gently press down to form a domed cookie. Repeat with the remaining dough, leaving a small gap between each cookies.
- Bake: Bake for 12-15 minutes, until the cookies are lightly golden and slightly cracked on top.
- Cool: Allow the cookies to cool on the tray for 3 minutes before transferring them to a wire rack to cool completely. Enjoy!

Freeze the cookies by placing them in a freezer-safe container, separating layers with parchment paper to prevent sticking. They can be frozen for up to 3 months.

These are really good tasting cookies, love the fact there is no refined sugar. I used 1/3 c sweetener, part of that was honey, other part was pure maple syrup just because I was low on honey but they turned out great!I also used natural PB which I think helps with mixing as when adding the flour did thicken to a nice dough consistency. I do not mind the seediness of the chia seeds and the health benefits are great. Thanks for the recipe.
