Smashed avocado toast isn’t just good, it’s phenomenal! And I’ve taken it up a notch by making it a bit fancy.

Imagine the creamy texture of perfectly smashed avocado, layered with the richness of soft-boiled eggs, the tangy sweetness of tomatoes, and topped with a garnish of watercress for that extra zing.

Its peppery notes harmoniously blend with the avocado, eggs, and tomatoes, creating a symphony of flavors.

How do you smash an avocado?

To smash an avocado, simply cut it in half, remove the pit, scoop out the flesh, and then mash it with a fork to your desired consistency.

How To Make Smashed Avocado Toast

Prepare the Egg: Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil, then boil for 3-4 minutes for soft-boiled eggs. Transfer them to cold water to stop the cooking process. 

Toast the Bread: Toast the bread until golden brown.

Smear the Avocado: Spread the mashed avocado evenly onto the piece of toasted bread.

Assemble the Toast: Top the avocado-covered bread with slices of tomato. Peel the egg, cut it in half and add it on top. Season with salt and pepper. Garnish with watercress and enjoy!

Storage Instructions

Freeze: Wrap them tightly in plastic wrap or foil, place them in an airtight container or freezer bag, and store in the freezer for up to 3 months. When you’re ready to enjoy them, simply thaw at room temperature until softened or overnight in the refrigerator.
