Smashed Avocado Toast
How good is smashed avocado on toast? SO GOOD!! Is there anymore left to say??
I made mine (and soon to be yours), smashed avocado on toast a little fancy! With the addition of hard boiled eggs and a garnish of watercress and I’m guessing everyone adds tomato to their avo on toast yeah?
Have you ever tried watercress before?! It’s peppery notes pair perfectly with the avo, eggs and tomatoes, pretty much all of it! I say watercress but I actually used garden cress, much of a muchness really. I could only find garden cress at the nursery but we planted it in our aquaponic systems so they are sitting and growing in water, so now I just consider it watercress, yay!
I sometimes get asked what I have for breakfast since converting to gluten free and vegetarian. I have this nearly every single day! Best thing since sliced bread, because it is on sliced bread, ha ha. When I’m not eating this for brekkie, I’m probably not eating brekkie at all! Sometimes I just ain’t got no time for whipping up a few slices, you know what I mean? But that is no excuse!
Smashed avo will fill you up, especially if you have more than one slice. If you’re not into avocado ( I know some people who aren’t, they will remain nameless 😉 ) Making this for yourself or your family and friends, will definitely convert them, well I hope so anyway!
As I was saying earlier, sometimes you just don’t have time to make anything for brekkie but even just some smashed avocado with a couple slices of tomato will do the trick, which is what I do 90% of the time! I don’t think there is anything more to say about a simple avo on toast then to just gobble it all up and then make some more! Enjoy!
- 2 gluten free pieces of bread
- Half of 1 avocado, mashed
- 3-4 slices of tomato
- 1-2 hard boiled eggs
- Salt and pepper, to taste
- Watercress for garnish
- Cook hard boiled eggs then peel shell and cut into desired sizes.
- Toast bread until golden.
- Spread mashed avocado onto each piece of toast.
- Top with egg, tomato slices, a sprinkle of salt and pepper and garnish with a little watercress.
- Serve and enjoy!
