What can I use instead of coconut oil?

You can substitute coconut oil with other mild oils such as vegetable oil, though coconut oil helps keep the white chocolate smooth and manageable.

Expert Tips

  • Consistency Check: When adding peppermint extract to white chocolate, it can thicken quickly. Add additional coconut oil to maintain a smoother texture if needed.
  • Swirling Technique: For the best swirls, use a light hand to drag the white chocolate through the dark chocolate without overly mixing the two, which can muddy the distinct colors.
  • Sharp Knife for Cutting: Use a sharp knife to cut the bark into shards for clean edges.

How Do I Prevent The Bark From Cracking Unevenly?

Ensure the bark is fully chilled and set before cutting, and use a sharp, heavy knife to apply even pressure when cutting. Tip: Run the knife under hot water, wipe it dry and then cut your bark.

Ingredients

  • 400 g (14 oz.) dark chocolate block, broken into squares
  • 300 g (10.5 oz.) white chocolate block, broken into squares
  • 1 Tbsp coconut oil
  • 1-2 drops green food colouring, optional
  • 1 tsp mint extract

Instructions

  • Prepare Baking Tray: Line a large flat baking sheet with parchment paper and set it aside.
  • Melt Chocolates: Set up two double boilers. Melt the dark chocolate in one and the white chocolate with coconut oil in the other, over medium heat. Stir occasionally until both chocolates are completely melted.
  • Adjust Heat: Once melted, reduce the heat to low to keep the chocolates warm and manageable.
  • Flavor White Chocolate: If using green food coloring, add it to the white chocolate now and mix well. Add the mint extract, stir well. If the white chocolate has thickened too much, add a teaspoon of coconut oil to thin it out.
  • Spread Dark Chocolate: Pour the melted dark chocolate onto the center of your prepared tray. Using a spatula, gently spread the chocolate into your a large rectangle.
  • Add White Chocolate: Dollop lines of the white chocolate over the dark chocolate base. Use a butter knife or skewer to gently swirl the white chocolate through the dark chocolate to create a marbled effect.
  • Chill to Set: Refrigerate the bark for 30-60 minutes or until it is completely hard and set.
  • Cut and Serve: Once set, use a sharp knife to break the bark into pieces or break it up using your hands. Enjoy!

Notes

  • Refrigeration: Store the bark in an airtight container in the refrigerator for 1-2 weeks to maintain freshness.
