Pineapple Crush Mocktail

Pineapple Crush Mocktail made with crushed pineapple, lime juice, mint, and club soda. A refreshing non-alcoholic drink perfect for summer or parties!

Ingredients

  • 2 cups fresh pineapple chunks, or 1 cup crushed pineapple
  • 1/4 cup lime juice, about 2 limes
  • 4 fresh mint leaves, ripped into small pieces
  • 1 cup crushed ice cubes, or whole ice cubes
  • 1 cup club soda

Garnish

  • Pineapple wedges, mint leaf or lime slices, optional

Instructions

  • Crushed Ice: If using whole ice cubes, crush them first in the blender and set them aside in the freezer.
  • Add Pineapple & Lime: In a blender, combine the pineapple chunks (or crushed pineapple) and the lime juice.
  • Add Mint: Rip the mint leaves into small pieces and add them to the blender. Blend with the pineapple and lime until smooth.
  • Blend With Ice: Add the crushed ice to the blender and pulse a few times to mix it with the pineapple puree. If you prefer a smoother texture, blend until the ice is fully incorporated.
  • Assemble the Drink: Pour the mixture into serving glasses, leaving some room at the top for the club soda
  • Add Sparkle: Gently top off each glass with club soda, stirring lightly to combine without losing too much fizz.
  • Garnish and Serve: Garnish each glass with a pineapple wedge, mint leaf or lime slice. Serve immediately and enjoy!

Notes

  • Store: Any leftovers can be kept in a tightly sealed jar or container in the refrigerator for up to 24 hours. It's best enjoyed fresh to maintain the effervescence of the club soda.
