Preheat Oven: Preheat your oven to 350ºF (180ºC) fan-forced. Lightly grease a 9x13 inch baking dish and set aside.
Prepare the Peaches: Pour 2 full cans of sliced peaches with their syrup into the baking dish. Drain the third can, then add just the peach slices to the dish. Stir gently to combine and distribute evenly.
Add Flavorings: Sprinkle over the cinnamon, nutmeg, and vanilla extract. Gently stir again to mix the spices and flavorings through the peaches.
Add Brown Sugar: Evenly sprinkle the brown sugar over the peach mixture.
Make the Topping: In a medium bowl, combine the yellow cake mix with the melted butter. Mix with a fork until crumbly and clumpy.
Top and Bake: Sprinkle the cake mix topping evenly over the peaches. Do not stir. Bake for 40–50 minutes, or until the top is golden and bubbling at the edges.
Cool and Serve: Let the cobbler rest for 5-10 minutes before serving until just set. Best enjoyed warm with a scoop of vanilla ice cream!
