Ingredients

  • 1 cup almond meal
  • 2 scoops (about 1/2 cup) vanilla protein powder, or any flavor
  • 1 Tbsp ground coffee beans, or instant coffee granules
  • 1/2 cup almond butter
  • 4 Tbsp pure maple syrup
  • 30 g dark chocolate melted, for drizzling, optional

Instructions

  • Prepare tray: Line a small tray with parchment paper and set aside.
  • Blend ingredients: In a high-speed food processor, add all ingredients except the chocolate.
  • Form dough: Blend on high until well combined and the mixture sticks together, resembling a soft dough. Add a little more maple syrup if it’s too dry.
  • Roll into balls: Pick up approx. 1–2 tablespoons of mixture and roll into balls. Place on the lined tray. Note: if you’re not drizzling with chocolate, transfer straight into a container.
  • Add drizzle: Drizzle melted chocolate over the bliss balls.
  • Chill: Place in the refrigerator for 15–20 minutes or until chocolate has set. Enjoy!

Notes

Keep your coffee protein balls in an airtight container in the fridge for 1 week to 10 days. For longer storage, freeze up to 2 months. Just thaw for a few minutes before eating.
