Easy Pineapple Popsicles

Equipment

  • 6 stainless steel popsicle molds
  • 6 Wooden popsicle sticks

Ingredients

  • 3 cups (500g/17.6 oz) fresh pineapple, cubed
  • 1/2 cup canned coconut milk, using the solids only at the top of the can
  • 1 Tbsp lime zest
  • 1/4 cup freshly squeezed lime juice
  • 1/2 Tbsp honey or maple syrup

Instructions

  • Blender Selection: Using a high-speed blender, combine all ingredients. The pineapple, coconut milk, lime juice, lime zest, and honey.
  • Blending: Blend on high until the mixture is smooth and fully combined.
  • Filling Molds: Pour the mixture into the popsicle molds. The mixture should fill 6 molds. Place the wooden sticks into the middle of each.
  • Freezing: Transfer the molds to the freezer, and let them set overnight or until solid.
  • Removing Popsicles: To release the popsicles, briefly immerse each mold in warm water for 10-15 seconds, and they should slide out effortlessly.
  • Optional Garnish: For an added zing, consider grating a bit more lime zest over each popsicle before serving.

Notes

  • Store: Once fully frozen, popsicles can be transferred from their molds to a freezer-safe zip-top bag or airtight container. Place a sheet of parchment paper between layers to prevent sticking. Store in the freezer for up to 1-2 months for optimal freshness. Always keep in the freezer, not the refrigerator, to maintain their form.
