Ingredients

  • 1 1/2 cups full-fat plain or vanilla Greek yogurt
  • 1/4 cup mini or regular dark chocolate chips
  • 3/4 cup fresh strawberries, sliced
  • 1/2 cup fresh or frozen blueberries
  • 1/4 cup granola or chopped nuts of choice

Instructions

  • Prepare Pan: Line a 7 x 11-inch brownie pan with parchment paper and lightly spray with cooking oil spray to help it stick in place. If you don’t have spray, just hold the paper in place while adding the mixture, it will naturally stay down once the yogurt is spread in.
  • Mix Yogurt Base: In a small mixing bowl, combine the yogurt and chocolate chips. Stir until evenly mixed.
  • Spread Yogurt Mixture: Spoon the yogurt mixture into the prepared pan and spread into an even layer using a spatula or the back of a spoon.
  • Add Fruit Toppings: Scatter the sliced strawberries and blueberries evenly over the yogurt mixture.
  • Add Granola: Sprinkle the granola evenly over the top.
  • Freeze: Place the pan in the freezer and freeze for at least 4 hours or overnight until completely firm.
  • Remove From Pan: Lift the frozen yogurt slab out of the pan using the parchment paper and transfer it to a chopping board.
  • Slice and Serve: Using a sharp knife, cut into bars or break into bark-style pieces. Serve immediately or return any leftovers to the freezer.
  • Store: Transfer leftovers to an airtight freezer-safe container, separating layers with parchment paper if needed. Store in the freezer for up to 2 weeks.
