  • 180 g butter, cubed and softened at room temperature
  • 95 g 1/3 cup caster sugar
  • 1 tsp vanilla bean extract
  • 1 large egg, room temperature
  • 2 cups 270g gluten free all purpose flour or regular all purpose flour, I use ‘Bob’s Red Mill Baking 1-1 Gluten Free Flour’*
  • 1 tsp baking powder
  • 1 jar store-bought strawberry jam, use homemade if desired


  1. In a large mixing bowl, or the bowl of an electric stand mixer (if using), add softened butter, caster sugar and vanilla. Beat on high for 2 minutes until mixture turns light/pale yellow and fluffy in texture. Scraping down the sides as needed.
  2. Add egg and beat until well combined.
  3. Sift over flour and baking powder together.
  4. Beat until a soft dough forms, approx. 30 seconds. Scraping down the sides as needed.
  5. Wrap dough in plastic wrap and refrigerate for 30 minutes.
  6. Preheat oven to 180ºC (356ºC). Line a large baking tray with parchment paper, set aside.
  7. Pick up approx. one heaped teaspoon of dough, roll and form into a smooth disc (slightly flattened dough ball). Place on lined tray and repeat with remaining dough.
  8. Using the end of a wooden spoon, gently form an indent in the centre of each.
  9. Fill each indent with jam.
  10. Bake for 12-14 minutes or until slightly golden around the edges.
  11. Remove and cool on pan for 3 minutes.
  12. Carefully transfer to a wire rack to cool completely.
  13. Serve and enjoy!

Recipe Notes

Store in an airtight container, in the pantry or refrigerator, for 1 week.

*I use Bob's Red Mill 1-to-1 baking flour.
