Ingredients

  • 2 sheets puff pastry, thawed
  • 8 Tbsp tomato paste
  • 2 Tbsp dried mixed Italian herbs
  • Salt & pepper, to taste
  • 2 cups shredded cheese, cheddar or pizza mix
  • 2 Tbsp whole milk

Instructions

  • Preheat Oven & Prepare Tray:
Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper and set aside.
  • Prepare Pastry: Place one sheet of thawed puff pastry on a large cutting board. Spread 4 tablespoons of tomato paste evenly over the puff pastry. Scatter 1 cup of shredded cheese over the tomato paste and sprinkle over 1 tablespoon of the dried herbs. Season with salt and pepper.
  • Roll and Cut: Roll the pastry tightly from one edge to form a log. Slice into pinwheels about 1-inch (2cm-3cm) wide. Place on the prepared baking sheet.
  • Brush with Milk: Brush the top of the roll with 1 tablespoon of milk.
  • Repeat: Repeat the filling, rolling and brushing process (steps 2 through 4) with the second sheet of thawed puff pastry.
  • Bake: Bake for 25-35 minutes or until the pinwheels are puffed, crispy and golden. Remove from the oven and let them cool slightly on the tray. Serve immediately or cool completely and store in an airtight container for later use. Enjoy!
