This No Bake Crushed Pineapple Slice Recipe combines a crunchy biscuit base with a creamy pineapple frosting, topped with juicy pineapple tidbits for extra flavor!
Line Baking Pan: Line a 9 x 9 inch (22cm x 22cm) square baking pan with parchment paper. Set aside.
Crush Biscuits: In a high-speed food processor, crush biscuits to a crumb. Transfer to a large mixing bowl.
Add Coconut: Stir through desiccated coconut.
Mix Wet Ingredients: Add the condensed milk, melted butter, and crushed pineapple to the biscuit mixture. Use a wooden spoon or rubber spatula to mix until well combined and it sticks together.
Press into Pan: Firmly press the mixture into the lined pan. Use the back of a spatula, a wooden spoon, or your hands to ensure the base is compact.
Chill: Place the pan in the refrigerator to chill while preparing the frosting.
Pineapple Frosting
Sift Icing Sugar: Sift icing sugar into a medium-sized mixing bowl to ensure no lumps.
Add Butter and Lemon Juice: Pour in melted butter and crushed pineapple. Whisk until the mixture is smooth and thick.
Spread Icing: Evenly spread the icing over the chilled base.
Add Pineapple Pieces: If desired, place some pineapple pieces/tidbits on top of the frosting.
