Ingredients

  • 2 1/2 cups (300g / 10.6 oz.) powdered sugar / icing sugar
  • 60 g unsalted butter, melted
  • 2 Tbsp freshly squeezed lemon juice, about one medium-large lemon

Instructions

  • Prepare Base: Ensure your slice base (whether cooked or no-bake) is ready and set before you begin making the icing to prevent it from hardening too quickly.
  • Sift Sugar: In a medium-sized mixing bowl, sift the powdered sugar to remove any lumps.
  • Combine Ingredients: Pour in the melted butter and lemon juice. Whisk the mixture until well combined and smooth; the texture should be thick.
  • Spread Icing: Spread the icing over your prepared slice base immediately to ensure it smooths out easily. Use a spatula or the back of a spoon for an even layer.
  • Chill and Set: Allow the iced slice to set in the refrigerator for about 1-2 hours.
  • Serve: Once set, cut into desired pieces and serve. Enjoy!

Notes

  • Store: If you have leftover icing or need to make it ahead, keep it in an airtight container in the refrigerator for up to 3 days. Before reuse, let it warm to room temperature for about 30 minutes and give it a good stir. If it appears thick or separated, add a little more lemon juice and whisk until it regains a smooth consistency.
 
  • Freeze: Freezing is not recommended as it can alter the texture of the icing, causing separation or graininess. If you must freeze, use an airtight container and store for no more than 1 month.
 
  • Thaw: Thaw frozen icing in the refrigerator overnight. Stir well after thawing, and add a bit of lemon juice if needed to smooth it out. Use the revived icing promptly for best results.
