Preheat the Oven: Preheat your oven to 300ºF (150ºC). Line a regular 12-hole muffin pan with paper muffin cases and set aside.
Prepare the Cornflakes: Place the cornflakes in a large mixing bowl and set them aside.
Combine Ingredients for Glaze: In a small saucepan, add the butter, sugar, and honey.
Heat the Mixture: Place the saucepan over low-medium heat and warm until the butter melts and the mixture begins to simmer. Maintain a slow simmer and cook for 1 minute, then remove from heat.
Add Vanilla: Stir the vanilla extract into the heated mixture.
Coat the Cornflakes: Pour the warm mixture over the cornflakes and gently stir with a spatula or wooden spoon until the cornflakes are evenly coated and the glaze is well distributed. Tip: Work quickly as the glaze thickens fast.
Fill the Muffin Cases: Spoon the coated cornflakes into the prepared paper cases, filling each to the top.
Bake: Bake for 10 minutes until the tops are lightly golden.
Cool: Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. The honey joys will harden and set as they cool. Enjoy!
