Grilled Corn on the Cob with Smoky Onion & Tomato Relish

Grilled Corn on the Cob with smoky onion and tomato relish is the perfect game day appetizer. A delicious snack for your next party or family BBQ!

Ingredients

  • 6 large corn on the cob, husks pulled back or removed if preferred
  • 2 Tbsp butter or oil
  • 1 large red onion peeled and thinly sliced
  • 1 1/2 cups store-bought tomato relish or tomato salsa
  • 1/2 cup fresh parsley, roughly chopped

Instructions

  • Remove corn husks: Remove the corn husks if desired. I left mine on for appearance.
  • Heat the barbecue: Melt butter (or oil) on a pre-heated barbecue on medium heat.
  • Grill the corn: Place corn cobs onto the barbecue, cooking on slow heat, turning occasionally until nicely grilled and tender (approximately 10-15 minutes). It’s best to constantly turn the corn to ensure even cooking.
  • Grill the onions: Whilst corn is cooking, add sliced onion to the barbecue. Sauté until browned, grilled and smokey. Set aside.
  • Assemble the corn: Once the corn is tender and grilled, remove from the barbecue along with the cooked onions. Top with sautéed onions, tomato relish (or salsa), and chopped parsley. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 1-2 days.
