Chocolate Hedgehog Slice

Chocolate Hedgehog Slice with Walnuts is an easy no-bake slice packed with biscuits, coconut, condensed milk and a silky melted chocolate topping!

Ingredients

Base

  • 250 g (8.9 oz.) Marie biscuits, or arrowroot / plain digestives biscuits
  • 1/2 cup desiccated coconut
  • 1/2 cup walnuts, roughly chopped
  • 3 Tbsp unsweetened natural cocoa powder
  • 3/4 cup full-fat sweetened condensed milk
  • 200 g unsalted butter, cubed

Topping

  • 180 g milk chocolate bar/block, or chips
  • 2 tsp coconut oil, or vegetable oil

Instructions

Base

  • Line Tin: Line a 11 x 7-inch (20cm x 30cm) brownie pan with parchment paper. Set aside.
  • Prepare Biscuits: In a high-speed food processor, crush biscuits, leaving about half the biscuits in larger pieces. Alternatively, you can do this by placing them in a zip-lock bag and crush them using a rolling pin. Set aside.
  • Combine Dry Ingredients: Add the biscuits to a large mixing bowl. Add the coconut, chopped walnuts and cocoa powder. Mix until well combined. Set aside.
  • Melt: In a saucepan, add the condensed milk and cubed butter and slowly melt over low-medium heat, stirring until completely melted and the mixture is smooth. Remove from the heat.
  • Combine: Pour the melted condensed milk and butter mixture into the dry biscuits. Use a wooden spoon or spatula to mix until well combined.
  • Transfer Mixture: Spoon and press the mixture firmly into the lined pan. Set aside.

Topping

  • Melt Chocolate: Break up the chocolate and melt with the coconut oil in a double boiler over low heat or microwave until smooth.

  • Pour and Spread: Pour the melted chocolate over the base. Move the pan around with your hands to evenly spread the chocolate.

  • Chill: Chill for 1-2 hours or until firm. Cut into squares and enjoy!

  • Slice and Serve: Lift it out of the tin and place it on a cutting board. Let it sit for about 10 minutes for the chocolate to come slightly to room temperature so it does not crack when you cut it. Run your knife under hot water, wipe it dry then cut the hedgehog into squares. Enjoy!

Notes

Storage: Store the hedgehog in an airtight container in the refrigerator for up to 1 week.
Freeze: For longer storage, wrap the entire slab or individual slices in cling film, then place in a freezer-safe bag or container. It can be frozen for up to 3 months.
Thaw: Thaw the slices in the refrigerator overnight. For quicker thawing, leave them at room temperature for a few hours until they are soft enough to eat.
