Ingredients

  • 1 large egg
  • 1 slice bread of choice
  • 1/2 ripe avocado, mashed
  • 2-3 slices tomato
  • Salt and pepper to taste
  • Watercress, for garnish, or garnish of choice

Instructions

  • Prepare the Egg: Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil, then boil for 3-4 minutes for soft-boiled eggs. Transfer them to cold water to stop the cooking process.
  • Toast the Bread: Toast the bread until golden brown.
  • Smear the Avocado: Spread the mashed avocado evenly onto the piece of toasted bread.
  • Assemble the Toast: Top the avocado-covered bread with slices of tomato. Peel the egg, cut it in half and add it on top. Season with salt and pepper. Garnish with watercress and enjoy!
