Healthy Chocolate Rice Krispie Treats

These light and Healthy Chocolate Rice Krispie Treats are made with a wholesome mix of unsweetened rice puff cereal, natural cocoa powder, and desiccated coconut.

Ingredients

  • 3 cups Rice Krispies, or Rice Bubbles
  • 1/4 cup natural unsweetened cocoa powder
  • 50 g unsalted butter
  • 1/2 cup almond butter
  • 1/2 cup pure maple syrup

Instructions

  • Prepare Pan: Line an 8” x 8” square baking pan with parchment paper.
  • Mix Dry Ingredients: In a large bowl, combine rice puffs and cocoa powder. Set aside.
  • Melt Butter and Almond Butter: In a pot over low-medium heat, melt butter, almond butter, and maple syrup. Stir continuously until smooth.
  • Combine Wet and Dry: Pour the melted mixture over the rice puffs. Mix gently until well coated.
  • Press into Pan: Firmly press the mixture into the lined pan. Use a flat spatula to ensure it's compacted and even.
  • Chill: Refrigerate for 1-2 hours or overnight until set.
  • Slice: Cut into squares once firm. Enjoy!

  • Store: Keep in an airtight container, refrigerated, for up to 1 week – 10 days.
