Lemon Bliss Balls

Lemon Bliss Balls are a perfect quick and easy snack infused with plenty of fresh lemon zest and lemon juice blended with coconut, maple syrup, coconut cream and coconut water!

Ingredients

  • 2 1/4 cups desiccated coconut
  • 2 Tbsp lemon zest, about 1-2 large lemons
  • 2 Tbsp lemon juice, about 1-2 large lemons
  • 2 Tbsp coconut cream, use the thick part from the top of the can; chill beforehand to separate if needed
  • 2 Tbsp coconut water, or plain water
  • 3 Tbsp pure maple syrup, or rice malt syrup or honey

Instructions

  • Preparation: Line a baking sheet with parchment paper and set aside.
  • Combine Ingredients: In a high-speed food processor, add all the ingredients.
  • Process: Pulse a few times to incorporate, then process on high until the mixture is well combined and starts to stick together.
  • Shape Balls: Take about 1-2 Tbsp of the mixture and roll into small balls. If the mixture is too loose, add more desiccated coconut.
  • Set on Tray: Place the balls on the prepared baking tray and continue until all the mixture is used.
  • Chill: Refrigerate for 30 minutes to firm up. Enjoy!

Notes

  • Store: In an air-tight container, refrigerated, for 1 week to 10 days.
 
  • Freeze & Thaw: Freeze bliss balls on a tray, then store them in a freezer-friendly container for up to 3 months. Thaw at room temperature for 30 minutes or in the fridge overnight.
