5 Ingredient Peanut Butter Granola

This oil-free 5 Ingredient Peanut Butter Granola is made with a combination of oats, coconut, peanut butter, maple syrup and mini chocolate chips. Baked until crisp and golden brown!

Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 3/4 cup unsweetened desiccated coconut, or shredded coconut
  • 3/4 cup natural peanut butter, crunchy or smooth
  • 1/3 cup pure maple syrup
  • 1/2 cup mini dark chocolate chips

Instructions

  • Preheat oven to 160ºC (320ºF) and set aside a large baking sheet, no need to line it.
  • In a large mixing bowl, combine oats and coconut, mix well.
  • Add peanut butter and maple syrup to a small pot.
  • Place over low heat on stovetop and stir until peanut butter melts and mixture becomes smooth. Remove from heat.
  • Pour peanut butter mixture over oats and coconut. Using a wooden spoon or rubber spatula, mix until well combined. Using your hands to mix may make it easier.
  • Spread granola out onto your baking sheet.
  • Bake for 10 minutes then remove it from oven and give it a stir to ensure even cooking. Return to oven and bake for a further 5-10 minutes until toasted and golden.
  • Remove from oven and set aside to cool down completely on the baking sheet, about 30 minutes - 1 hour.
  • Once cooled, sprinkle over chocolate chips and stir through, leaving any chunks of granola still intact.
  • Enjoy or store away for later.
