These meat-free Vegetarian Burgers are brimming with spinach and protein-rich chickpeas all tucked into a soft, gluten-free bun. Ideal for a delicious family meal!

Ingredients

Burger Buns

Vegetarian Patties

  • 3 cups fresh spinach, or Swiss chard leaves
  • 2 stalks celery, trimmed
  • cup fresh rosemary
  • cup fresh parsley
  • 1 cup canned chickpeas, drained
  • Half of 1 avocado
  • 1 small tomato
  • 1 small red onion, peeled and halved
  • 2 cloves garlic, peeled
  • 1 tsp ground turmeric
  • ½ tsp ground cumin
  • ½ tsp ground paprika
  • 1/2 tsp Salt
  • 1/4 tsp pepper
  • ¾ cup gluten-free all-purpose flour, or all-purpose flour
  • 1-2 Tbsp coconut oil, for cooking

Fillings

  • Fresh curly kale leaves
  • Sliced tomato
  • Cheese slices, dairy-free if desired
  • Sliced purple onion
  • Avocado, smashed
  • Tomato sauce

Instructions

Vegetarian Patties

  • Process Greens: In a high-speed food processor, add spinach (or Swiss chard), celery, rosemary, and parsley. Blend on high until all greens are completely chopped. Set aside. Pour greens into a large mixing bowl. Set aside.
  • Prepare Veggie Mix: To the processor, add the drained chickpeas, avocado, tomato, onion, garlic, turmeric, cumin, paprika, salt and pepper. Blend on high until smooth but still a little chunky. The chickpeas should just be turning smooth.
  • Combine Mixtures: Pour the chickpea mixture into the bowl with the greens. Mix until well combined.
  • Add Flour: Sprinkle in the flour and mix until well combined.
  • Form Patties: Shape the mixture into burger patties, sized to fit your buns. Set them aside on a tray or plate.
  • Cook Patties: Heat a tablespoon of coconut oil in a large skillet over medium-high heat. Place the formed patties into skillet, cooking in batches if needed, and cook for 2-3 minutes on each side or until dark golden and fully cooked. Repeat with the remaining mixture, adding an extra 1 tablespoon oil when needed to coat the skillet.
  • Assemble Burgers: Slice the burger buns, add the cooked patty and place in your desired fillings and close the bun.
  • Serve and Enjoy: Serve the vegetarian burgers hot with a side of fries or a fresh salad. Enjoy!

Notes

  • Store: Any leftover patties in an airtight container in the refrigerator for up to 3 days.
 
  • Freezing: Freeze them individually on a baking sheet before transferring to a freezer-safe bag or container. Freeze for up to 3 months. Thaw in the refrigerator overnight before reheating to serve.
