Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup coconut flakes
  • 1/2 cup cashews, roughly chopped
  • 1/2 cup pecans, roughly chopped
  • 1 Tbsp chia seeds
  • 1 tsp ground cinnamon
  • 1/3 cup pure maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 large egg white

Instructions

  • Preheat Oven: Set to 356ºF (180ºC). Line a large baking sheet with parchment paper and set aside.
  • Combine Dry Ingredients: In a large bowl, mix oats, coconut flakes, cashews, pecans, chia seeds, and cinnamon.
  • Add Wet Ingredients: Blend in maple syrup, melted coconut oil, and vanilla extract.
  • Whip Egg White: In a separate bowl, beat the egg white until frothy, then fold into the granola mix.
  • Spread Granola: Spread the mixture evenly on the lined baking sheet.
  • Bake: Bake for 15-20 minutes until golden. Avoid stirring to keep granola chunky.
  • Cool: Let the granola cool on the tray, do not disturb it as it cools, this is what makes it chunky.
  • Serve or Store: Enjoy with milk, yogurt, and fruits, or store for later use.

Notes

  • Store: Keep in an airtight container, like a mason jar, in the pantry at room temperature for up to 2 weeks.
