PLUM YOGURT CAKE
One Bowl Cake
A one bowl yogurt cake with sliced blood plums as a topping
- Plain flour
- Granulated sugar
- Baking powder
- Lemon zest
- Greek yogurt
- Olive oil
Beat together the sugar, eggs, lemon zest & juice.
With the beaters running, slowly drizzle in the olive oil to emulsify.
Beat through the yogurt & vanilla extract.
Beat in the flour, baking powder & salt until incorporated.
Pour the batter into the pan, arrange sliced plums on top & bake for 30-35 minutes.
