A one bowl yogurt cake with sliced blood plums as a topping

INGREDIENTS:

- Blood plums - Plain flour - Granulated sugar - Baking powder - Lemon zest - Salt - Greek yogurt - Olive oil - Eggs - Vanilla

STEP 1: Beat together the sugar, eggs, lemon zest & juice.

STEP 2: With the beaters running, slowly drizzle in the olive oil to emulsify.

STEP 4: Beat through the yogurt & vanilla extract.

STEP 5: Beat in the flour, baking powder & salt until incorporated.

STEP 6: Pour the batter into the pan, arrange sliced plums on top & bake for 30-35 minutes.
