Ingredients

  • 1 1/2 cups (225g) plain all-purpose flour, scoop & leveled
  • 1 cup old-fashioned whole rolled oats
  • 1/3 cup golden/raw granulated sugar
  • 200 g salted butter, cubed and softened to room temperature
  • 1 cup store-bought or homemade strawberry jam, or jam flavor of choice

Instructions

  • Preheat the oven to 180ºC (350ºC). Line a 9” x 9“ square baking pan with parchment paper, and set aside.
  • Before beginning, ensure the butter is cubed and softened to room temperature.
  • In a large mixing bowl add flour, oats, and sugar. Mix until well combined.
  • Add softened butter and using your hands, rub the butter into the flour until it forms a crumbly dough.
  • Transfer about 2/3 of the crumble dough into the lined pan and firmly press it in to form the base.
  • Pour the jam over the base, spread it out and leave a small gap between the jam and the edge of the base all the way around.
  • Sprinkle over the remaining crumble.
  • Bake for 35-40 minutes or until the crumble topping has turned lightly golden and the jam is bubbling.
  • Remove and allow the crumble to cool completely in the pan.
  • Carefully transfer to a wire rack to cool further.
  • Slice into bars and enjoy!

Notes

Make sure the butter is soft and at room temperature before starting. This makes it easier to blend into the dry ingredients.
Rub the butter into the flour until it resembles a crumbly dough. It should stick when pressed together.
Use only whole rolled oats and not steel cut or quick oats for these crumble bars.
Leave a small gap around the edges between the jam and the edges of the base.
Store in an airtight container, at room temperature or refrigerated, for 5 days.
You can easily freeze these strawberry crumble bars by allowing them to cool completely, cutting them into bars, placing them in a freezer-friendly container then freezing them for up to 3 months.
Defrost the crumble bars in the refrigerator or at room temperature until thawed or heat them in the microwave or oven.
