- Shredded coconut - All-purpose flour - Baking powder - Salt - Unsalted butter - Light brown sugar - Eggs - Whole milk - Olive oil - Vanilla extract - Powdered sugar

How to make Simple Toasted Coconut Cake using our easy method!

Step-by-step instructions! 

Toast shredded coconut in a large frying pan over medium-high heat until golden.

In a medium-sized mixing bowl, whisk together the flour, baking powder & salt.

In a large mixing bowl, beat together the butter & sugar for 2 minutes.

Add the eggs one at a time beating for 15 seconds after each addition.

Beat through the milk, olive oil and vanilla.

Mix through 3/4 cup of the toasted coconut.

Add the flour mixture & beat until just incorporated, ensuring not to over-mix.

Pour batter into cake tin, smooth out the top & bake for 30-35 minutes.

In a small mixing bowl, whisk together all frosting ingredients until smooth.

Pour frosting over cooled cake & let it drizzle down the sides.
