These Easy Pumpkin Scones are moist, light, and fluffy cheese scones. Low in sugar and eggless healthy pumpkin scones made in one bowl & baked in 25 minutes!

Ingredients

- Pumpkin - Plain flour - Baking powder - Salt - Butter - Cheddar cheese - Milk - Pepita seeds

How to make Healthy Pumpkin Scones using our easy method!

Step-by-step instructions! 

Peel, remove seeds & chop the pumpkin. Steam until tender.

Mash the pumpkin & set aside to cool.

In a mixing bowl, whisk together the flour, baking powder & salt.

Add the butter & rub into the flour until it resembles a coarse crumb, about 2 minutes.

Stir through the grated cheddar cheese.

Pour in the milk along with the cooled mashed pumpkin & mix to create a rough dough.

Pat the dough into a thick disc & cut into 8 equal triangle scones.

Brush with milk & sprinkle with pepita seeds. Bake for 25 minutes & enjoy!
