Ingredients

- Pumpkin - Spinach - Feta cheese - Olive oil - Dried herbs - Salt & pepper - Puff pastry sheets

Step-by-step instructions! 

Roast the chopped pumpkin coated in the oil for 25-30 minutes.

Blend the roasted pumpkin, spinach, herbs, salt & pepper in a food processor.

Spread the pumpkin & spinach filling over the sheet of puff pastry.

Sprinkle over the crumbled feta.

Roll up the pastry tightly.

Cut the pastry log into 2-3cm (1-inch) scrolls.

Place pinwheels onto a lined baking sheet & bake for 25-30 minutes or until golden and puffed.
