This easy cold Gluten Free Pasta Salad is made without mayonnaise and paired with a quick Italian vinaigrette dressing, classic vegetables and hard boiled eggs. Perfect for the summer holiday season!

Ingredients

- Eggs - Water - Sea salt - Lemon juice - Red wine vinegar - Dijon mustard - Garlic - Parsley & basil - Cracked black pepper - Extra virgin olive oil - Honey or maple syrup - Gluten free penne pasta

- Carrot - Cucumber - Red capsicum - Tomato - Celery - Red onion - Spring onion

How to make Gluten Free Pasta Salad using our easy method!

Step-by-step instructions! 

Boil eggs until they're hard boiled then sit in cold water for 10 minutes.

Peel & slice the eggs lengthways and set aside.

Cook the gluten free pasta until a bit softer than al dente. Drain off water & rinse under cold water.

Add all vinaigrette ingredients to a glass jar and shake until well combined.

Chop all the vegetables & combine with the cold pasta in a large serving bowl.

Stir through hard boiled eggs.

Pour over the vinaigrette dressing & gently mix until pasta & veggies are coated.
