- Cocoa powder - All-purpose flour - Baking powder - Salt - Granulated sugar - Light brown sugar - Instant coffee powder - Vanilla extract - Unsalted butter - Eggs - Powdered sugar

In a mixing bowl, sift together the flour, cocoa powder and baking powder. Whisk through the salt.

In a large mixing bowl, whisk together both sugars and coffee powder.

Whisk through the melted butter & vanilla extract until well combined.

Whisk through the eggs, one at a time, mixing well after each addition.

Add the flour mixture & mix until it forms a soft cookie dough.

Cover bowl with plastic wrap & chill dough in the freezer for 1 hour.

Roll dough into balls & coated generously in powdered sugar.

Place onto the lined sheet, leaving as balls, with a small gap between each & bake for 10-12 minutes.

Cool on sheet for 5 minutes then transfer to wire rack to cool completely or enjoy them warm!
