Seed Bars! These wholesome bars are loaded with a variety of nutritious and delicious seeds, spices, salt and with warmed honey to stick it altogether! 
These seed bars are so simple, created in one bowl, well minus the warming of the honey in the pot ;). Then it bakes in 20-25 minutes. It bakes on a lower temp and be sure not to not over-bake your slice as to can turn brown quite quickly, you’re looking for a light golden overall. 

This slice uses seeds:

Pumpkin
Chia
Sunflower
Hemp
Chia
With added desiccated coconut, which I have read is technically a seed, interesting hey? Then you’ll add a couple of delicious spices, cinnamon and cardamon. A pinch of sea salt to bring all the flavours together and finally, the warmed honey. The honey is what sticks all the ingredients together, that’s it. You don’t need much either, this uses half a cup, which still might sound a lot but it’s just the right amount for these bars. 

Warming the honey also makes it a lot easier to mix through the dry ingredients. Because honey is quite thick, it makes it hard and tedious to mix it in. Also it being warm, really is wonderful to work with.

Description

These wholesome bars are loaded with a variety of nutritious and delicious seeds, spices, salt and with warmed honey to stick it altogether! 


Ingredients

Scale
  • 1 cup (100g) desiccated coconut 
  • 1/2 cup (80g) pumpkin seeds
  • 1/2 cup (70g) sunflower seeds
  • 1/2 cup (70g) hemp seeds
  • 1/3 cup (60g) chia seeds
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamon 
  • Pinch of sea salt 
  • 1/2 cup (190g) honey

Instructions

  1. Preheat oven to 160ºC (320ºF). Line a 9” x 9” square baking pan with parchment paper. Set aside.
  2. In a large mixing bowl, add all ingredients except the honey. Coconut, pumpkin, sunflower, hemp and chia seeds. Then spices, cinnamon, cardamon and sea salt. Mix until well combined. 
  3. In a small saucepan, add honey and put over a low-medium heat. Heat through until honey is warm to the touch and thinner in consistency. 
  4. Pour warmed honey into seed mixture and mix until well combined. 
  5. Transfer mixture to lined pan and press down until even on top, I like to press the top down with a spatula. 
  6. Bake for 20-25 minutes or until lightly golden on top.
  7. Remove from oven and allow to completely cool in pan. 
  8. Remove from pan and slice into long bars or smaller rectangles/squares. 
  9. Store in the refrigerator for 5 days – 1 week.
