  • 75 g salted butter, melted

  • 1/4 60 ml lemon juice, about 2-3 lemons
  • 1/3 cup cold thickened cream / heavy cream



  • Prepare the Pan: Line a 9-inch x 9-inch square baking pan with parchment paper, ensuring edges extend over the sides for easy removal. Set aside.
  • Crush Biscuits: In a high-speed food processor, crush biscuits to a crumb.
  • Mix with Butter: Transfer the biscuit crumbs to a mixing bowl, pour in the melted butter, and mix until the mixture holds together.
  • Press into Pan: Evenly press the crumb mixture into the prepared pan, using a spatula or the base of a cup to create a smooth even layer. Refrigerated while you make the filling.
