Energy Nut Bars

  • 2 cups rolled oats (gluten-free)
  • ½ cup gluten free all purpose flour
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • 1 Tbsp. chia seeds
  • Pinch of himalayan pink salt
  • ½ cup apple sauce
  • ¼ cup almond butter
  • ½ cup raw honey
  • ¼ cup each of almonds, pecans, pumpkin seeds, sunflower seed kernels and hazelnuts.
  • Icing
  • 3 Tbsp. pure icing sugar
  • 1-2 Tbsp. water
  1. Bars
  2. Pre-heat oven to 180ºC (356ºF) and line a 10”x10” square baking pan with parchment paper, set aside.
  3. In a large bowl combine oats, flour, baking soda, cinnamon, chia seeds and salt, mix well.
  4. Add in almonds, pecans, pumpkin seeds, sunflower seeds and hazelnuts, mix well.
  5. Stir through the apple sauce, almond butter and honey until well combined.
  6. Pour mixture into prepared pan, making sure the mixture is evenly spread out.
  7. Bake for 25-30 minutes or until slightly golden.
  8. Allow to cool completely in the pan.
  9. Icing
  10. Take slice out of the pan.
  11. In a small bowl, combine icing sugar and water and stir until thoroughly combined.
  12. Add more water if mixture is to thick or add more icing sugar if mixture is too thin and watery.
  13. Drizzle icing over the uncut bars, let set before cutting into bars.
  14. Cut into bars and serve.
Will keep in an airtight container for up to 1 week.
