Pear + Lemon Fizz

Ingredients
  • Dehydrated Pears
  • 1 bosc pear
  • Rim Garnish
  • 2 Tbsp caster sugar
  • 2 tsp ground cinnamon
  • 1 lemon slice
  • Cocktail
  • 1 cup pear juice
  • Juice of half a small-medium lemon, equal to 2 tablespoons
  • Optional: 2 ounces (60ml) vodka or pear vodka
  • Ice cubes
  • 1 cup Original Remedy Kombucha
  • Garnish
  • Fresh rosemary sprigs
  • 1-2 Cinnamon sticks
  • Dehydrated pear slices
Method
  1. Dehydrated Pears
  2. If you’re wanting to garnish with these pears, simply slice a pear in half and then carefully slice the pear from the cut side into thiner slices, not too thin though as they won’t hold their shape on the glass rim.
  3. Bake pears in a preheated oven at 180°C (350°F) for 15-20 minutes or until lightly golden and crisp. You may also use an actual dehydrater for this step.
  4. Rim Garnish
  5. Combine sugar and cinnamon on a plate, mix until well combined.
  6. Rub the lemon slice around the rim of the glass.
  7. Swirl the glass rim into the cinnamon sugar so it sticks to the glass. Set aside.
  8. Cocktail
  9. Pour pear juice, lemon juice and vodka in a mixing jug. Mix well with a spoon. NOTE: If you have a cocktail shaker, shake these liquids with extra ice cubes until well chilled.
  10. Add ice cubes to serving glasses, pour pear and lemon mixture over ice and top up with the kombucha.
  11. Garnish
  12. Garnish with cooked pear slices, rosemary sprigs and swirl in cinnamon sticks.
  13. Serve and enjoy!
