Detox Buddha Bowl

  • Avocado + Bentonite Clay Dressing
  • 1 ripe avocado, fleshed removed
  • 1 tsp apple cider vinegar
  • ¼ tsp garlic powder
  • Salt and pepper, to taste
  • 1 tsp Edible MUD Food Grade Bentonite Clay*
  • 4 Tbsp water
  • Sweet Potato Fries
  • 1 small-medium sized beetroot, peeled and cut into small cubes
  • Half a sweet potato, peeled and sliced into thick cut fries
  • 1 Tbsp coconut oil, melted
  • 1 tsp garlic powder
  • Veggies
  • 1 cup green cabbage, roughly chopped
  • 1 cup broccoli florets
  • 1 cup kale, roughly chopped
  • 1 Tbsp sesame seeds, for topping
  1. Avocado + Bentonite Clay Dressing
  2. Add all dressing ingredients into a blender, blend on high until well combined and smooth. Add a little more water if it’s too thick.
  3. Pour dressing into a clean bowl and refrigerate until ready to use.
  4. Sweet Potato Fries
  5. Preheat oven to 200°C (390°F).
  6. Place sliced sweet potato fries onto an oven baking tray. Drizzle over melted coconut oil. Sprinkle with garlic powder.
  7. Roast potatoes for 20-25 minutes or until golden and slightly crispy.
  8. Veggies
  9. Prepare a steamer, filling base pot half filled with water.
  10. Place cubed beetroot into top pot of the steamer, cover with lid and place over high heat to bring to a boil.
  11. Once boiling, reduce heat to medium and steam until beetroot is just tender. Approx. 10-15 minutes.
  12. Place chopped cabbage and broccoli into steamer with the beetroot, cover with lid. Steam veggies until just tender. Approx. 3-5 minutes.
  13. Place chopped kale over veggies, cover with lid. Only steam for approx. 20-30 seconds or until kale turns soft and bright green then remove from heat.
  14. Once sweet potato fries are golden and crispy, remove from oven.
  15. Place fries and steamed veggies into a serving bowl.
  16. Drizzle over prepared avocado dressing and sprinkle with sesame seeds.
  17. Enjoy!
Store leftovers in an airtight container, refrigerated, for 2-3 days.
*You can find food grade bentonite clay from your local health food store. Otherwise omit the clay from recipe and enjoy this delicious avocado dressing as is.
