Tomato Cucumber Onion Salad

Ingredients
  • 2 cups cherry tomatoes, roughly chopped
  • 1 large purple onion, peeled, sliced then chopped
  • 1 large cucumber, roughly chopped
  • Dressing
  • ½ cup olive oil
  • 3 Tbsp apple cider vinegar
  • 1 tsp dijon mustard
  • 1 Tbsp balsamic vinegar
  • 2 tsp dried dill
Method
  1. In a small mixing bowl, combine all dressing ingredients, mix well, set aside.
  2. In a large mixing bowl, add all chopped vegetables, add more of each one for a larger salad, if desired.
  3. Pour dressing over vegetables, stir to coat well.
  4. Pour into a large serving bowl or platter.
  5. Enjoy!
Notes
Store leftovers in an airtight container, refrigerated, for 2-4 days.
