Honey'd Cornflake Chocolate Slice

Remember Honey Joys? Today we are throwing it back to the good old days and upgrading an old classic! Crispy cornflake base with a velvety smooth sweet chocolate icing!
  • Base
  • 1½ cups cornflakes
  • ½ cup coconut sugar
  • 1 Tbsp cacao powder
  • 1 cup almond meal
  • 1½ tsp baking powder
  • 100g coconut oil, melted
  • 4 Tbsp organic honey
  • Chocolate Icing
  • 1 cup icing sugar
  • 2-3 Tbsp cacao powder
  • 2-4 Tbsp water
  1. Base
  2. Preheat oven to 180ºC (356ºF) and line a 9” x 9” square tin with parchment paper, set aside.
  3. In a mixing bowl, combine all base ingredients, mix until well combined.
  4. Press into prepared tin.
  5. Bake for 10-12 minutes or until golden and edges are browned.
  6. Remove and set aside, do not remove from tin.
  7. Chocolate Icing
  8. In a small mixing bowl, combine all icing ingredients until desired icing consistency.
  9. Pour icing over base, spreading out evenly with a spatula.
  10. Set in refrigerator for 30 minutes - 1 hour or until icing is set.
  11. Remove from tin, cut into squares.
  12. Serve and Enjoy!
Store in an airtight container, refrigerated, for 1 week.
The base will be puffy and soft when removed from the oven, it will harden when it begins to cool.
