Coconut Rough

An all time favourite, Coconut Rough! Simple 4 ingredient recipe that will have you drooling. Chocolate + coconut = pure indulgence!
  • 250g dark chocolate, broken into squares
  • 60g coconut oil
  • 1½ tsp vanilla
  • 250g desiccated coconut
  1. Line a baking tray with parchment paper, set aside.
  2. In a double boiler over low-medium heat, melt chocolate and coconut oil together until smooth and shiny.
  3. Turn off heat and stir through vanilla.
  4. Add coconut in two batches, mixing well after each addition.
  5. Using a spoon, pick up 1-2 tablespoons of mixture, place on prepared tray and form into rounds. Repeat with remaining mixture.
  6. Refrigerate until set or place in the freezer to fasten up the setting process.
  7. Serve and Enjoy!
Store in an airtight container, refrigerated, for 1 week - 10 days.
