Ever dreamt of banana bread on-the-go?! Try these mini gluten free chocolate banana mini loaves. Simple, chocolatey and most importantly, insanely addictive!
Ingredients
Method
  1. Preheat oven to 180°C (350°F). Grease a mini bread loaf pan with coconut oil or butter, set aside.
  2. In a medium mixing bowl, combine flour, cocoa, baking powder and salt. Set aside.
  3. In a large mixing bowl, whisk together mashed bananas, butter, sugar, egg and vanilla.
  4. Gently fold dry mixture into wet until just combined and smooth, ensuring all lumps are gone.
  5. Bake for 25-30 min or until a skewer inserted into the middle comes out clean.
  6. Remove from oven and cool in pan for 15 mins.
  7. Transfer to a wire rack to cool completely.
  8. Chocolate Drizzle
  9. Drizzle melted chocolate over each mini loaf.
  10. Serve and Enjoy!
Notes
Store in an airtight container, in the pantry, for 1 week.

Suitable alternative to butter is coconut oil.
A suitable alternative to rapadura sugar is coconut sugar or cane sugar.
