Chocolate Berry Slice

The best raw vegan slice you will make this week! Each slice bursts with flavour of berry jam, coconut and white chocolate. Can we take a moment to appreciate this?
Ingredients
  • Base
  • 1 cup brazil nuts*
  • ⅔ cup desiccated coconut
  • ⅓ cup raw cacao powder
  • ½ cup pitted dates, soaked in boiling water for 10 minutes then drained.
  • 3 Tbsp coconut oil, solid
  • 2 Tbsp maple syrup
  • Jam Layer
  • 2 cups frozen mixed berries
  • 2 Tbsp maple syrup
  • 1 Tbsp chia seeds
  • ½ cup desiccated coconut
  • White Chocolate Topping
  • 200g vegan white chocolate, broken into squares
  • 3 Tbsp coconut oil
  • 1 cup desiccated coconut
Method
  1. Base
  2. Line a 8” x 8” square baking pan with parchment paper, set aside.
  3. In a high speed food processor, add in brazil nuts and pulse until just broken up.
  4. Add in coconut and cacao powder, pulse until combined.
  5. Add in drained soaked dates, coconut oil and maple syrup, process until well combined and mixture begins to stick together.
  6. Press mixture into prepared pan, set aside.
  7. Jam Layer
  8. In a medium sized pot, add frozen berries and maple syrup and bring to a boil.
  9. Turn down the heat to a simmer, and continue to cook for 10-15 minutes until it thickens and most of the fruit is broken up.
  10. Stir through chia seeds and continue to simmer for a further 3-5 minutes until thick and the chia seeds swell.
  11. Pour jam into a small mixing bowl and place in the freezer for 10-15 minutes to cool and thicken.
  12. Once jam has cooled down, stir through desiccated coconut.
  13. Pour jam over the base layer, set aside.
  14. White Chocolate Topping
  15. In a double boiler, melt white chocolate and coconut oil over low-medium heat. Stirring occasionally while it melts.
  16. Once completely melted and smooth turn off heat, add coconut and mix until well combined.
  17. Pour mixture over jam layer, evenly, use a spatula to do this.
  18. Set in the refrigerator for 1-2 hours or until completely set.
  19. Remove slice from refrigerator.
  20. Set in room temperature for 10-15 minutes before cutting.
  21. Run a sharp knife under hot water, wipe off and cut your slices.
  22. Serve and Enjoy!
Notes
Leave slice out in room temperature for 10-15 minutes before slicing. This will make it easier to cut through.

* When i made this slice i used 1 full cup of brazil nuts. They are slightly bitter and have a distinctive flavour to them. If you don’t enjoy brazil nuts you can simply use half a cup of brazil nuts and half a cup of almonds.
