Raw Vegan Carrot Balls

Ingredients
  • Carrot balls
  • 2 cups desiccated
  • 2 small/medium carrots, quartered
  • 10 pitted dates, chopped into smaller pieces
  • ¼ cup sultanas
  • ½ tsp cinnamon
  • ¼ tsp allspice
  • ⅛ tsp ginger
  • ⅛ tsp nutmeg
  • 1 Tbsp almond butter
  • 2 Tbsp maple syrup
  • ½ tsp vanilla bean extract
  • Optional:
  • Chocolate coating
  • ½ cup Dairy free dark chocolate, melted for coating. You will need more chocolate if you wish to coat the whole ball in chocolate.
  • Toffee shards
  • ½ cup caster sugar
  • 2 Tbsp water
Method
  1. Carrot Balls
  2. Line a baking tray with parchment paper and set aside.
  3. Place all ingredients except chocolate into a high speed food processor.
  4. Process on high until all the carrot is broken down and mixture begins to stick together.
  5. Test this by picking up a small amount and form it into a ball, making sure it sticks together, add more maple syrup or almond butter if its not holding it’s shape.
  6. Use your hands to form mixture into balls and place on baking tray.
  7. Refrigerate for 30 minutes or until set.
  8. Optional:
  9. Chocolate coating
  10. Melt chocolate over a double boiler or microwave.
  11. Dip either one half or the whole ball in the chocolate.
  12. Refrigerate for a further 15 minutes or until chocolate is set.
  13. Toffee shards
  14. Line a baking tray with parchment paper and set aside.
  15. In a small/medium sized pot, melt together sugar and water on a high heat.
  16. Bring to a boil and continue boiling for a further 5 minutes or until the toffee is a rich amber colour.
  17. Do not walk away from the pot, keep an eye on your toffee, making sure it doesn’t burn.
  18. Using a fork or teaspoon, drizzle or pour small amounts of toffee onto the parchment paper. Making random shapes for decoration.
  19. Let the toffee cool down before handling as it will be very hot.
  20. Break off small amounts and stick them into the top of your carrot balls.
  21. Serve and enjoy!
Notes
These carrot balls are just as delicious without the chocolate and toffee.
Store chocolate coated balls in an airtight container, refrigerated for up to 1 week.
Store non-coated carrot balls either in the refrigerator or pantry for up to 1 week.
