Easter Rocky Road

Description

Under 10-ingredient double layered rocky road sprinkled with mini Easter eggs! Fun and delicious for all ages!


Ingredients

Scale
  • 400 g dark baking chocolate, (broken into squares, I used 75% dark chocolate & this reduces the sweetness overall)
  • 2/3 cup desiccated coconut
  • 1/2 cup hazelnuts (skin off and roughly chopped)
  • 150 g 2 cups regular sized pink & white marshmallows, (chopped in half)

Topping

  • 200 g white baking chocolate, (broken into squares)
  • 2 tsp coconut oil
  • 1 packet small/mini solid milk chocolate Easter eggs, (I used Cadbury)
  • 1/4 cup Organic Times Little Gems*, (or smarties)

Instructions

  1. Line a 9” x 12“ rectangle baking pan with parchment paper, set aside. 
  2. Prepare a double boiler with a heat proof mixing bowl over simmering water.
  3. Add dark chocolate to the bowl and gently melt, stirring occasionally.
  4. Once chocolate is completely melted and smooth, reduce heat to low and stir through coconut.
  5. Stir through chopped hazelnuts.
  6. Add halved marshmallows and mix until coated in chocolate, remove from heat.
  7. Carefully pour into lined pan, spreading out evenly.
  8. Refrigerate for 15-20 minutes whilst you make the topping.

Topping

  1. Prepare a double boiler with a heat proof mixing bowl over simmering water.
  2. Add white chocolate and coconut oil to the bowl and gently melt, stirring occasionally.
  3. Once chocolate is completely melted and smooth, remove from heat.
  4. Remove rocky road base when it’s just beginning to set around the edges, the majority of it still needs to be soft but not completely liquid.
  5. Carefully pour melted white chocolate over dark chocolate base, working quickly, swirl the pan around to spread the white chocolate to an even layer.
  6. Unwrap and gently slice in half lengthways, the mini chocolate eggs.
  7. Place eggs into white chocolate topping.
  8. Sprinkle over little gems or smarties if using.
  9. Refrigerate for 2-3 hours or until completely hardened and set.
  10. Remove from pan and slice into bars or squares.
  11. Serve and enjoy!

Notes

Store in an airtight container, refrigerated, for 1 week.
