Happy Easter! Can you believe it’s already Easter..? I cannot, it’s like we just had christmas! To celebrate, i made Strawberry Chocolate Chip Pancakes, these beauties are not only gluten free but they are completely vegan pancakes, great right?!
I wanted to switch things up and opt for a different pancake recipe than my usual banana pancakes, which are super delicious and i love them but there is always room for change. These chocolate chip pancakes have the perfect balance between pancake batter, sweet strawberries and oozing chocolate chips. You can see that i have added peanut butter into the batter, if you’re allergic, not fret, simply substitute for another nut butter you can consume such as almond butter, sunflower seed butter or hazelnut butter. Another great alternative is unsweetened apple sauce, just go easy on the almond milk if you choose to use apple sauce, you don’t want your pancake batter too runny, do you?
I hope you’re all having a wonderful long weekend with your family, friends and loved ones celebrating Easter. I hope the Easter bunny will pay you a delicious and generous visit this year. Those chocolate easter eggs are everything, that particular smell and taste you can only get at this time of year. My mum and i always take a sneaky sniff of the easter eggs chocolate at the supermarket, hoping nobody is watching us, we simply cannot resist!
Would skipping the LSA mix still make this work? It’s really expensive for something I didn’t really like last time I tried to use it in baking. Can I just use chia seeds and flax meal?

so 1/2 tbsp chia seeds and 1/2 tbsp flax meal? Just want to make sure i get this right, i want to make these for my breakfast.
Hi Shennae! Yes that is correct, do 1/2 Tbsp chia seeds and 1/2 Tbsp flax meal. The chia seeds with add a lovely crunch and the flax meal will still act the same as the LSA since you’re using the flax in ground form. Let me know how you go! Enjoy xx
Hi there! My first comment on your site, I believe! I found these as I had a very similar thought at Easter, and really want to make them again. How did you get away with not using eggs in this recipe?
Hi Alison! Wonderful to have you here 🙂 The batter is more on the runny side and i believe if there were the addition of eggs, the batter would be thicker. The pancakes still come out perfect, hold their shape and taste delicious. My gluten free flour blend seems to help bind the ingredients together well along with the L.S.A mix.
