This homemade chunky granola is as chunky as it gets, thanks to a secret ingredient: whipped egg white.

  • Coconut Flakes: Omit if not a fan of coconut or replace with more oats or nuts.
  • Cashews and Pecans: Feel free to substitute with almonds, walnuts, or any nuts of your choice.
  • Chia Seeds: Flaxseeds can be a good alternative.
  • Maple Syrup: Honey or agave syrup can be used as alternatives.
  • Egg White: The secret to chunky clusters. For a vegan option, use a flax egg.

How To Make Chunky Granola

Preheat Oven: Set to 356ºF (180ºC). Line a large baking sheet with parchment paper and set aside.

Combine Dry Ingredients: In a large bowl, mix oats, coconut flakes, cashews, pecans, chia seeds, and cinnamon.

Add Wet Ingredients: Blend in maple syrup, melted coconut oil, and vanilla extract.

Whip Egg White: In a separate bowl, beat the egg white until frothy, then fold into the granola mix.

Spread Granola: Spread the mixture evenly on the lined baking sheet.

Bake: Bake for 15-20 minutes until golden. Avoid stirring to keep granola chunky.

Cool: Let the granola cool on the tray, do not disturb it as it cools, this is what makes it chunky. 

Serve or Store: Enjoy with milk, yogurt, and fruits, or store for later use.
