This easy Lemon Cream Shortbread Biscuit recipe has a 4-ingredient lemon cream sandwiched between two melt in your mouth shortbread biscuits.

Ingredients

- Butter - Icing sugar - Lemon zest & juice - Egg yolk - Plain flour - Cornflour

How to make Lemon Cream Biscuits using our easy method!

Step-by-step instructions! 

Cream together the butter, sugar & lemon zest for 1 minute. Beat in egg yolk.

Sift over flours & beat until a soft dough forms.

Use your hands to bring the dough together. Refrigerate dough for 1 hour.

Roll dough out to a large circle, 5mm in thickness.

Take a rectangle cookie cutter & cut out the shapes.

Place on a lined flat baking tray & bake for 12-14 minutes.

Make the cream filling by whisking together the icing sugar, melted butter, lemon zest & juice.

Spoon the filling into a piping bag fitted with a small-medium round tip.

Pipe lemon cream onto the underside of one biscuit & sandwich it together with another biscuit.
